Makes 4 stuffed French toast sandwiches (8 slices of bread)
Serves 2–4 people depending on appetite
🛒 What you need:
- 8 slices bread (white or brioche works best)
- 4–6 tbsp pecan paste (don’t be shy here)
- 2 large eggs
- ½ cup milk
- 1 tsp vanilla extract (optional, but lovely)
- 1 tbsp sugar (optional)
- Pinch of salt
- 2 tbsp butter (for frying)
🍳 How to make it:
1. Build your sandwiches
Spread a generous layer of pecan paste on 4 slices of bread.
Top with the remaining slices to make sandwiches.
2. Make the egg mixture
In a bowl, whisk together:
- eggs
- milk
- vanilla
- sugar
- pinch of salt
3. Soak (but don’t drown)
Dip each sandwich into the mixture, coating both sides.
Let it soak for about 10–15 seconds per side — just enough to absorb, not fall apart.
4. Fry until golden
Heat butter in a pan over medium heat.
Cook each sandwich for 3–4 minutes per side until:
- golden brown outside
- warm and soft inside
5. Serve immediately
Slice in half and watch that pecan centre melt slightly

- Dusting of icing sugar
- Fresh berries
- Extra spoon of pecan paste (because why not)
